Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast
  • 2 large carrot
  • 2 medium potatoes
  • 1 cup green beans
  • 1 medium onion
  • 2 pieces garlic
  • 4 cups chicken broth
  • 2 medium tomatoes
  • 1 large zucchini
  • 2 tablespoons lemon juice
  • 0.25 cup parsley
  • 1 teaspoon oregano

Instructions

  1. 1Heat the olive oil in a large pot over medium heat.
  2. 2Add diced onions and minced garlic, sauté until translucent.
  3. 3Add chopped chicken breast to the pot and cook until browned on all sides.
  4. 4Pour in chicken broth and bring to a boil.
  5. 5Add diced carrots, potatoes, and tomatoes to the pot. Reduce heat to a simmer.
  6. 6Cover the pot and cook for 20 minutes, or until vegetables are tender.
  7. 7Add chopped green beans and zucchini to the pot and simmer for an additional 10 minutes.
  8. 8Stir in lemon juice, fresh parsley, and dried oregano.
  9. 9Season with salt and pepper to taste.
  10. 10Cook for an additional 5 minutes, then remove from heat.
  11. 11Let the soup rest for a few minutes before serving to blend the flavors.
  12. 12Serve hot, garnished with a sprig of fresh parsley.
