Ingredients
- 1 lb red meat
- 6 large eggs
- 2 tbsp extra virgin olive oil
- 0.5 medium yellow onion
- 1 medium poblano peppers
- 2 roma tomatoes
- 1 tsp salt
- 0.5 tsp coarsely ground pepper
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 2 tbsp fresh chives
- 6 small whole wheat tortillas
- 1 ripe avocado
- 2 lime wedges
- 1 tsp garlic-infused oil
- 1 can (15 oz) pinto beans
Instructions
- 1Prepare the beef: Cook the Red Meat until tender, then shred it. In a large skillet, heat 1 tbsp Extra virgin olive oil and lightly crisp the shredded beef for 5-7 minutes to simulate machaca. Remove and set aside.
- 2Sauté aromatics: In the same skillet, add remaining 1 tbsp Extra virgin olive oil. Sauté Yellow onion, Poblano peppers, and Garlic-Infused Oil until softened (about 5 minutes). Add Roma tomatoes, Ground cumin, Smoked paprika, Salt, and Coarsely ground pepper; cook for 3-4 minutes.
- 3Combine and scramble: Return the crisped Red Meat to the skillet with the vegetables. Whisk Eggs with an additional pinch of salt and pepper, then pour into the skillet. Scramble until the eggs are just set. Stir in Fresh chives.
- 4Serve the Huevos con Machaca mixture immediately with warm Whole wheat tortillas, sliced Avocado, Lime wedges, and a side of Pinto beans.
