Ingredients

  • 1 lb turkey
  • 1.5 cup basmati rice
  • 3 cup stock
  • 2 tbsp extra virgin olive oil
  • 8 oz mushroom
  • 1 unit yellow bell pepper
  • 2 unit celery ribs
  • 1 tbsp fresh ginger
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley flakes
  • 1 tbsp lemon juice
  • 0.25 cup pine nuts

Instructions

  1. 1Heat olive oil in a large pot or Dutch oven. Brown ground turkey, then drain. Add bell pepper, celery, fresh ginger, and mushrooms; sauté until softened.
  2. 2Stir in basmati rice, cumin, oregano, thyme, salt, and black pepper. Cook for 1-2 minutes, stirring, until rice is lightly toasted.
  3. 3Pour in stock. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until liquid is absorbed and rice is tender.
  4. 4Remove from heat, let stand covered for 5 minutes. Fluff with a fork, stir in lemon juice, parsley flakes, and pine nuts. Serve warm.
