Ingredients

  • 400 grams pork sausage
  • 2 cups beans
  • 2 medium carrot
  • 2 stalks celery
  • 1 large onion
  • 3 cloves garlic
  • 6 cups vegetable broth
  • 1 can tomatoes
  • 2 cups kale
  • 2 tablespoons olive oil
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onions, carrots, and celery. Cook until vegetables are slightly soft, about 5 minutes.
  3. 3Add minced garlic and cook for another 1 minute until fragrant.
  4. 4Add lean pork sausage to the pot, breaking it apart with a spoon. Cook until browned.
  5. 5Pour in low-sodium vegetable broth and add diced tomatoes. Bring to a simmer.
  6. 6Rinse white beans under cold water and add to the pot.
  7. 7Add fresh thyme and rosemary.
  8. 8Season with salt and black pepper to taste.
  9. 9Simmer on low heat for 30 minutes, allowing the flavors to meld.
  10. 10Add chopped kale and cook for an additional 5 minutes until the kale is wilted but still vibrant.
  11. 11Taste and adjust seasoning if necessary.
