Ingredients
- 400 grams pork sausage
- 2 cups beans
- 2 medium carrot
- 2 stalks celery
- 1 large onion
- 3 cloves garlic
- 6 cups vegetable broth
- 1 can tomatoes
- 2 cups kale
- 2 tablespoons olive oil
- 1 tablespoon thyme
- 1 tablespoon rosemary
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add chopped onions, carrots, and celery. Cook until vegetables are slightly soft, about 5 minutes.
- 3Add minced garlic and cook for another 1 minute until fragrant.
- 4Add lean pork sausage to the pot, breaking it apart with a spoon. Cook until browned.
- 5Pour in low-sodium vegetable broth and add diced tomatoes. Bring to a simmer.
- 6Rinse white beans under cold water and add to the pot.
- 7Add fresh thyme and rosemary.
- 8Season with salt and black pepper to taste.
- 9Simmer on low heat for 30 minutes, allowing the flavors to meld.
- 10Add chopped kale and cook for an additional 5 minutes until the kale is wilted but still vibrant.
