Ingredients

  • 2 chicken breast
  • 1 tbsp clarified butter
  • 5 tbsp unsalted butter
  • 2 tbsp fresh chives
  • 4 cups cauliflower florets
  • 2 cups green beans
  • 1 tsp sea salt
  • 0.5 tsp garlic powder
  • 0.25 cup cream
  • 0.5 cup chicken broth
  • 1 shallot
  • 0.25 cup water
  • 1 tbsp dry milk
  • 1 tsp parsley flakes
  • 0.25 tsp cream of tartar

Instructions

  1. 1Steam cauliflower florets until very tender. Mash with 2 tbsp unsalted butter, cream, dry milk, 1/2 tsp sea salt, garlic powder, and cream of tartar until smooth. Keep warm.
  2. 2Heat clarified butter in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden. Reduce heat to medium-low, add remaining unsalted butter, minced shallot, and chicken broth. Baste chicken continuously, turning occasionally, until cooked through (internal temperature 165°F). Stir in half of the fresh chives.
  3. 3While chicken cooks, steam green beans in 1/4 cup water with a pinch of sea salt until tender-crisp.
  4. 4Serve the butter-basted chicken with mashed cauliflower and steamed green beans. Garnish with remaining fresh chives and parsley flakes.
