Ingredients

  • 1.5 lb chicken breast
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 1 large shallot
  • 1 tsp garlic powder
  • 1 tbsp fresh rosemary
  • 1 tbsp thyme
  • 2 tbsp parsley
  • 1 tsp dried rubbed sage
  • 1 tsp oregano
  • 0.5 tsp sweet paprika
  • 1 tsp sea salt
  • 0.5 tsp coarsely ground pepper
  • 1 lb asparagus spears
  • 0.5 cup water
  • 1 tbsp fresh chives

Instructions

  1. 1Season chicken breasts with sea salt, coarsely ground pepper, and sweet paprika. Heat extra virgin olive oil in a large pan over medium-high heat and sear chicken until golden brown, about 3-4 minutes per side. Remove chicken from pan.
  2. 2Reduce heat to medium, add unsalted butter and minced shallot to the pan, cooking until softened. Stir in garlic powder, fresh rosemary, fresh thyme, dried rubbed sage, and oregano, cooking for 1 minute until fragrant.
  3. 3Return chicken to the pan, coating with the herb butter sauce. Simmer gently for 5-7 minutes, or until chicken is cooked through.
  4. 4Meanwhile, steam asparagus spears in a separate pot with 0.5 cup water until tender-crisp, about 3-5 minutes.
  5. 5Serve chicken with the herb butter sauce and steamed asparagus, garnished with fresh chives and fresh parsley.
