Ingredients

  • 8 pieces lamb chops
  • 2 tablespoons rosemary
  • 3 cloves garlic
  • 1 cup mint
  • 1 cup yogurt
  • 2 tablespoons olive oil
  • 1 whole lemon
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 0.5 cup cucumber
  • 1 teaspoon paprika

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Finely chop the rosemary and garlic. Mix them together with olive oil, sea salt, and black pepper.
  3. 3Rub the lamb chops with the rosemary-garlic mixture, ensuring they are evenly coated.
  4. 4Place the lamb chops on a baking sheet lined with parchment paper.
  5. 5Roast in the preheated oven for 20-25 minutes or until they reach the desired doneness.
  6. 6While the lamb is roasting, prepare the mint yogurt sauce. Finely chop the mint leaves and mix with Greek yogurt, grated cucumber, lemon juice, and paprika.
  7. 7Season the mint yogurt sauce with salt to taste.
