Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 red bell peppers
  • 1 yellow bell pepper
  • 1 medium zucchini
  • 2 cups edamame
  • 1 cup cherry tomatoes
  • 0.5 cup olives
  • 1 tsp oregano
  • 0.5 tsp dried thyme
  • 0.5 cup herb broth
  • 1 tbsp lemon juice
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.25 cup parsley

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  2. 2Add diced red and yellow bell peppers and zucchini to the skillet. Sauté for 5-7 minutes until vegetables are tender-crisp.
  3. 3Stir in shelled edamame, halved cherry tomatoes, olives, dried oregano, and dried thyme. Pour in herb broth and bring to a gentle simmer. Cook for 3-5 minutes, allowing flavors to meld.
  4. 4Remove from heat. Stir in lemon juice, sea salt, and black pepper. Garnish generously with fresh chopped parsley before serving.
