Ingredients

  • 4 pieces chicken breast
  • 1 cup almond flour
  • 2 large eggs
  • 3 tablespoons olive oil
  • 6 medium tomatoes
  • 1 handful basil
  • 2 cloves garlic
  • 1 cup mozzarella cheese
  • 0.5 cup parmigiano reggiano

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Pound chicken breasts to even thickness and season with salt and pepper.
  3. 3Dredge each chicken breast in beaten eggs, then coat with almond flour.
  4. 4Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown on both sides.
  5. 5Transfer chicken to a baking dish.
  6. 6For the marinara sauce: Blend tomatoes, garlic, and basil until smooth. Cook the sauce in a skillet over medium heat for 10 minutes.
  7. 7Pour marinara sauce over chicken in the baking dish.
  8. 8Top each chicken breast with mozzarella and Parmesan cheese.
  9. 9Bake in the preheated oven for 20 minutes, or until cheese is bubbly and golden.
  10. 10Garnish with fresh basil leaves before serving.
