Ingredients

  • 4 cups yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon zaatar
  • 0.5 teaspoon sea salt
  • 4 for garnish mint
  • 1 teaspoon lemon zest
  • 8 slices cucumber
  • 4 slices grain pita bread

Instructions

  1. 1Line a large bowl with a clean cheesecloth or a fine mesh strainer.
  2. 2Pour the low-fat Greek yogurt into the cheesecloth, tying the corners to form a bag.
  3. 3Place the bag over the bowl to catch drips, and let it strain in the refrigerator for 24 hours to achieve thick labneh consistency.
  4. 4After 24 hours, remove the labneh from the cheesecloth and place it in a serving dish.
  5. 5Smooth the top of the labneh with a back of a spoon.
  6. 6Drizzle with high-quality olive oil evenly across the surface.
  7. 7Sprinkle zaatar and sea salt evenly over the labneh.
  8. 8Garnish with fresh mint leaves and lemon zest for a refreshing twist.
