Ingredients
- 400 g lamb loin
- 1 cup quinoa
- 1 cup cherry tomatoes
- 1 cup cucumber
- 0.5 cup red onion
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 cloves garlic
- 0.25 cup mint
- 0.25 cup parsley
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- 1Rinse quinoa under cold water and cook according to package instructions, then let it cool.
- 2Mix paprika, cumin, salt, and pepper. Rub the spice mixture all over the lamb loin.
- 3Heat a tablespoon of olive oil in a pan over medium heat. Add lamb loin and cook to desired doneness, approximately 6-7 minutes per side for medium-rare. Let it rest for 5 minutes, then slice thinly.
- 4In a large bowl, combine the cooked quinoa, sliced lamb, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
- 5Make the dressing by whisking together lemon juice, the remaining olive oil, minced garlic, chopped mint, and parsley in a small bowl. Season with salt and pepper to taste.
- 6Pour the dressing over the salad and toss gently to combine everything evenly.
- 7Let the salad sit for about 10 minutes to allow flavors to meld together before serving.
