  • 500 g lamb sausage
  • 200 g spinach
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 large onion
  • 1 medium red bell peppers
  • 150 g cherry tomatoes
  • 100 g feta cheese
  • 4 large eggs
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add crushed garlic and chopped onion to the skillet, cooking until translucent.
  3. 3Slice the lamb sausage into half-inch pieces and add to the skillet, browning evenly.
  4. 4Incorporate chopped red bell pepper and halved cherry tomatoes, cooking until slightly soft.
  5. 5Season the mixture with cumin, paprika, salt, and black pepper, stirring well.
  6. 6Reduce heat and add washed spinach leaves, covering the skillet to allow them to wilt.
  7. 7Once the spinach has wilted, create small wells in the skillet and crack an egg into each.
