Ingredients
- 4 oz chicken breast
- 2 tbsp basil
- 1 tbsp oregano
- 1 tbsp chives
- 1 tsp lemon zest
- 2 tbsp olive oil
- 0.5 cup cucumber
- 0.5 cup bell pepper
- 2 cups spinach
- 0.25 cup carrot
- 1 cup quinoa
- 0.25 tsp sea salt
- 0.125 tsp peppers
- 0.25 tsp oregano
- 0.125 tsp turmeric
Instructions
- 1Gently combine baby spinach, cucumber, bell pepper, shredded carrot, and cooked quinoa in a large bowl.
- 2Slice the pre-grilled chicken breast and add it to the salad.
- 3In a small bowl, whisk together the extra virgin olive oil, lemon zest, chopped basil, chopped oregano, chopped chives, sea salt, black pepper, dried oregano, and turmeric.
