Ingredients

  • 6 oz chicken breast
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon rosemary
  • 1 teaspoon thyme leaves
  • 1 teaspoon oregano
  • 1 medium zucchini
  • 1 medium bell pepper
  • 0.5 medium onion
  • 1 cup cherry tomatoes
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon peppers
  • 0.5 teaspoon oregano
  • 0.25 teaspoon paprika

Instructions

  1. 1In a bowl, combine lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, thyme leaves, fresh oregano, sea salt, black pepper, dried oregano, and smoked paprika (optional).
  2. 2Marinate the chicken breasts in the mixture for at least 30 minutes (or up to 4 hours) in the refrigerator.
  3. 3Preheat grill to medium-high heat.
  4. 4Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  5. 5Grill the sliced zucchini, bell peppers, red onion wedges, and cherry tomatoes alongside the chicken until tender and slightly charred.
  6. 6Let the chicken rest for 5 minutes before slicing.
  7. 7Serve the grilled chicken with the grilled vegetables.
