- 1 lb lean ground turkey
- 0.5 small white onion
- 2 cloves garlic
- 0.25 cup parsley
- 1 tsp dried rubbed sage
- 1 tbsp olive oil
- 1 tsp sea salt
- 0.5 tsp coarsely ground pepper
- 3 cups red cabbage
- 1 large red apple
- 1 medium carrot
- 2 tbsp fresh chives
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider
- 1 tsp honey
- 1 tbsp fresh mint
- 4 lettuce leaves
- 0.25 cup pomegranate arils
Instructions
- 1Prepare the slaw: In a large bowl, combine shredded red cabbage, julienned red apple, shredded carrot, chopped chives, and fresh mint. Whisk together extra virgin olive oil, apple cider, honey, 1/2 tsp sea salt, and 1/4 tsp coarsely ground pepper for the dressing. Pour over slaw ingredients and toss to combine.
- 2Form the burgers: In a separate bowl, gently mix lean ground turkey with minced white onion, minced fresh garlic, chopped parsley, dried rubbed sage, remaining 1/2 tsp sea salt, and 1/4 tsp coarsely ground pepper. Form into four uniform patties.
- 3Cook the burgers: Heat 1 tbsp olive oil in a large skillet over medium heat. Cook turkey patties for 4-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C).
- 4Assemble and serve: Place each cooked turkey burger on a large lettuce leaf. Top generously with the apple-cabbage slaw and sprinkle with pomegranate arils before serving.
