Ingredients

  • 1.5 lbs ground lamb
  • 1 medium yellow onion
  • 2 tsp garlic paste
  • 0.25 cup fresh mint
  • 1 tbsp ground coriander seeds
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp white pepper
  • 2 tbsp extra virgin olive oil
  • 1 cup non-fat greek yogurt
  • 2 tbsp lemon juice
  • 0.5 cup cucumber
  • 0.25 cup red onion
  • 1 tbsp fresh chives

Instructions

  1. 1In a large bowl, combine ground lamb, minced yellow onion, 1 tsp garlic paste, half of the chopped fresh mint, ground coriander seeds, oregano, salt, and white pepper. Mix well and form into oblong kofta shapes.
  2. 2Heat extra virgin olive oil in a large skillet over medium-high heat. Cook kofta in batches until browned on all sides and cooked through, about 8-10 minutes.
  3. 3While kofta cooks, prepare the mint yogurt. In a small bowl, whisk together non-fat greek yogurt, remaining 1 tsp garlic paste, lemon juice, remaining fresh mint, and a pinch of salt.
  4. 4Serve the hot lamb kofta immediately with a generous dollop of mint yogurt. Garnish with diced cucumber, thinly sliced red onion, and fresh chives.
