Ingredients

  • 200 g mixed olives
  • 150 g feta cheese
  • 150 g aged cheddar cheese
  • 200 g wheat bread
  • 50 ml olive oil
  • 1 tbsp lemon zest
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 2 cloves garlic
  • 0.5 tsp red pepper flakes

Instructions

  1. 1Combine lemon zest, chopped rosemary, thyme, minced garlic, and red chili flakes in a bowl.
  2. 2Add extra virgin olive oil to the herb mixture and mix well.
  3. 3Place mixed olives in a large bowl and pour the herb oil mixture over them. Toss to coat evenly.
  4. 4Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight.
  5. 5Slice the whole grain bread into thin pieces and toast lightly.
  6. 6Arrange the marinated olives on a small platter.
  7. 7Cut the feta and aged cheddar cheese into bite-sized pieces.
  8. 8Arrange the cheese pieces around the olives on the platter.
  9. 9Add the toasted whole grain bread to the platter.
  10. 10Garnish with additional fresh herbs if desired before serving.
  11. 11Serve immediately or store in the refrigerator until ready to serve.
