Ingredients
- 2 fillets cod
- 2 medium sweet potatoes
- 3 tbsp extra virgin olive oil
- 1 tsp sea salt
- 0.5 tsp black pepper
- 3 cloves garlic
- 1 small shallot
- 2 tbsp parsley
- 1 tsp fresh thyme leaves
- 0.5 tsp paprika
- 1 tbsp unsalted butter
- 1 pinch nutmeg
- 1 tbsp fresh chives
Instructions
- 1Preheat oven to 400°F (200°C). Toss sweet potato wedges with 1 tbsp olive oil, 1/2 tsp sea salt, 1/4 tsp black pepper, and nutmeg. Spread on a baking sheet and roast for 20-25 minutes until tender.
- 2While potatoes roast, pat cod fillets dry. In a small bowl, combine remaining 2 tbsp olive oil, minced garlic, diced shallot, chopped parsley, thyme, paprika, remaining 1/2 tsp sea salt, and remaining 1/4 tsp black pepper.
- 3Place cod fillets on a separate baking sheet. Drizzle with melted unsalted butter, then spoon the herb-garlic mixture over each fillet.
- 4Bake cod for 12-15 minutes, or until opaque and flaky.
- 5Serve baked cod immediately with roasted sweet potato wedges, garnished with fresh chives.
