Ingredients

  • 2 pieces grain tortillas
  • 4 large eggs
  • 1 cup chickpea
  • 2 cups spinach
  • 0.25 cup greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon cumin
  • 0.25 teaspoon paprika
  • 2 tablespoons cilantro
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Instructions

  1. 1Whisk eggs in a bowl, season with turmeric, cumin, paprika, salt, and pepper.
  2. 2Heat olive oil in a non-stick pan over medium heat. Add minced garlic and sauté until fragrant.
  3. 3Add the seasoned eggs to the pan, cooking and stirring until softly scrambled.
  4. 4Remove scrambled eggs from pan and set aside. In the same pan, add chickpeas and cook until warmed through.
  5. 5Add spinach to the pan with chickpeas, stirring until spinach is wilted.
  6. 6Prepare the yogurt sauce by mixing Greek yogurt with lemon juice, a pinch of salt, and chopped cilantro.
  7. 7Warm whole grain tortillas according to package instructions.
  8. 8Lay out the tortillas, and evenly distribute the scrambled egg mixture, chickpeas, and spinach onto each.
  9. 9Drizzle each with the prepared yogurt sauce.
  10. 10Fold the tortillas over the filling, tucking in the sides to form burritos.
  11. 11Serve immediately, garnished with additional cilantro if desired.
