Ingredients

  • 1 tablespoon olive oil
  • 6 units eggs
  • 2 cups spinach
  • 1.5 cups wheat flour
  • 1 cup milk
  • 0.5 cup feta cheese
  • 0.5 cup cherry tomatoes
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon peppers
  • 1 teaspoon oregano
  • 8 slices turkey bacon

Instructions

  1. 1Preheat the oven to 350°F (175°C). Grease muffin tins with olive oil.
  2. 2In a skillet over medium heat, cook the turkey bacon until crispy. Let it cool, then crumble.
  3. 3In a large bowl, whisk the eggs. Add in the milk and whisk until well combined.
  4. 4Chop the spinach and halve the cherry tomatoes.
  5. 5Add spinach, cherry tomatoes, crumbled turkey bacon, feta cheese, and spices (salt, black pepper, oregano) to the egg mixture.
  6. 6Sift the whole wheat flour and baking powder together, then fold into the wet ingredients until just mixed.
  7. 7Fill the greased muffin tins about 3/4 full with the mixture.
  8. 8Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. 9Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
