  • 1 head romaine lettuce
  • 1 cup baby carrots
  • 0.5 cup cucumber
  • 0.5 cup bean sprouts
  • 0.5 cup water chestnuts
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp ground cumin
  • 0.5 tsp paprika
  • 1 tbsp fresh basil
  • 0.25 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp tamari
  • 2 tbsp water
  • 0.25 tsp red pepper flakes
  • 0.25 cup cilantro
  • 1 tsp sesame seeds

Instructions

  1. 1Heat olive oil in a skillet over medium heat. Add diced chicken breast, salt, black pepper, ground cumin, paprika, and fresh basil. Sauté until chicken is cooked through and lightly browned.
  2. 2In a small bowl, whisk together tahini, lemon juice, honey, tamari, water, and optional red pepper flakes until the sauce is smooth and creamy. Adjust consistency with a little more water if needed.
  3. 3Arrange romaine lettuce cups on a serving platter. Fill each cup with the cooked seasoned chicken, shredded baby carrots, diced cucumber, fresh bean sprouts, and sliced water chestnuts.
  4. 4Drizzle the peanut-free tahini sauce generously over the filled lettuce cups. Garnish with fresh chopped cilantro and a sprinkle of sesame seeds before serving immediately.
