Ingredients

  • 1.5 lbs chicken breast
  • 0.25 cup lemon juice
  • 0.25 cup extra virgin olive oil
  • 1 tbsp extra virgin olive oil
  • 4 cloves garlic
  • 1 tbsp dried thyme
  • 0.5 tsp coarsely ground pepper
  • 1 tsp sea salt
  • 0.5 tsp sea salt
  • 1.5 cups non-fat greek yogurt
  • 1 medium cucumber
  • 2 tbsp Fresh Dill
  • 1 tsp apple cider vinegar
  • 1 medium red bell pepper
  • 0.5 medium white onion
  • 1 medium lemon
  • 1 tbsp parsley flakes

Instructions

  1. 1In a large bowl, combine the 1.5 lbs chicken breast (cut into 1-inch cubes), 1/4 cup lemon juice, 1/4 cup extra virgin olive oil, 4 minced garlic cloves, 1 tbsp dried thyme, 1 tsp sea salt, and 1/2 tsp coarsely ground pepper. Mix well to ensure the chicken is evenly coated. Marinate for at least 30 minutes in the refrigerator.
  2. 2While the chicken marinates, prepare the tzatziki sauce. In a separate bowl, mix together 1.5 cups non-fat Greek yogurt, 1 grated cucumber (squeezed dry), 1 tbsp extra virgin olive oil, 1/2 tsp sea salt, 2 tbsp chopped fresh dill, and 1 tsp apple cider vinegar. Stir until well combined. Cover and chill in the refrigerator until ready to serve.
  3. 3Once the chicken has marinated, thread the marinated chicken cubes alternately with 1-inch pieces of red bell pepper and 1-inch pieces of white onion onto skewers.
  4. 4Preheat your grill to medium-high heat. Place the skewers on the hot grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through, juicy, and has developed a light char.
  5. 5Serve the hot chicken souvlaki skewers immediately with the chilled tzatziki sauce on the side. Garnish with lemon wedges and a sprinkle of 1 tbsp parsley flakes.
