Ingredients
- 400 g fish
- 200 g shrimp
- 200 g mussels
- 2 tbsp olive oil
- 2 cloves garlic
- 1 large onion
- 1 medium fennel bulb
- 400 g tomatoes
- 2 cups vegetable broth
- 1 pinch saffron threads
- 2 leaves bay leaves
- 1 bunch parsley
- 1 whole lemon
Instructions
- 1Prepare the seafood by cleaning and cutting the fish into chunks, deveining the shrimp, and scrubbing the mussels.
- 2In a large pot, heat the olive oil over medium heat. Add minced garlic, chopped onion, and sliced fennel bulb. Saute until softened.
- 3Add the diced tomatoes, vegetable broth, saffron threads, and bay leaves to the pot. Bring to a simmer.
- 4Reduce heat to low and add the white fish chunks. Simmer gently for 10 minutes.
- 5Add the shrimp and mussels to the pot. Cover and cook for an additional 5-10 minutes, or until the mussels have opened and the shrimp is pink.
- 6Remove from heat. Discard any unopened mussels and the bay leaves.
- 7Finely chop fresh parsley and slice the lemon into wedges for garnish.
- 8Taste and adjust seasoning, adding salt and pepper as needed.
- 9Serve the stew in bowls, garnished with fresh parsley and a wedge of lemon on the side.
