Ingredients
- 1.5 lbs lamb
- 1.5 lbs red potatoes
- 0.25 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp fresh rosemary
- 1 tsp thyme
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp sweet paprika
- 0.5 tsp ground cumin
- 1 red bell peppers
- 1 cup grape tomatoes
Instructions
- 1Marinate lamb with a portion of the olive oil, lemon juice, rosemary, thyme, salt, pepper, and grated lemon rind.
- 2Toss quartered red potatoes and red bell pepper chunks with remaining olive oil, sweet paprika, ground cumin, salt, and pepper.
- 3Roast potatoes and bell pepper until tender and browned. Add grape tomatoes for the last 10 minutes of roasting.
- 4Grill the marinated lamb to your preferred doneness, allowing it to rest before slicing.
- 5Serve the grilled lamb with the roasted potatoes and vegetables, garnished with fresh chopped mint and sliced cucumber.
