- 2 roma tomatoes
- 0.5 cup red cabbage
- 0.5 cup feta cheese
- 0.5 cup non-fat greek yogurt
- 1 tablespoon fresh chives
- 1 tablespoon lemon juice
- 0.25 cup red onion
- 1 tablespoon fresh mint
Instructions
- 1Heat extra virgin olive oil in a skillet over medium heat. Brown ground lamb, seasoning with garlic powder, onion powder, oregano, ground cumin, salt, and pepper until cooked through and browned.
- 2While lamb cooks, prepare the yogurt sauce by combining non-fat greek yogurt with chopped fresh chives, fresh mint, and lemon juice. Prepare remaining toppings: slice cucumber, dice roma tomatoes, shred red cabbage, and thinly slice red onion.
