Ingredients
- 2 cup whole chicken
- 6 cup water
- 1.5 cup long grain rice
- 2 tbsp extra virgin olive oil
- 2 rib celery
- 1 cup baby carrots
- 2 tbsp lemon juice
- 1 tbsp ginger
- 2 bay leaves
- 0.25 cup basil
- 2 tbsp fresh chives
- 1 tsp rosemary
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp thyme
- 1 tsp lemon zest
- 2 cup greens
- 1 tbsp mint
Instructions
- 1In a large pot, heat olive oil over medium heat. Sauté diced celery, sliced baby carrots, and grated fresh ginger for 5-7 minutes until softened.
- 2Add water, bay leaves, salt, and coarsely ground pepper to the pot. Bring to a gentle simmer and cook for 15 minutes.
- 3Stir in the shredded cooked chicken, cooked long grain rice, and chopped greens. Continue to simmer for 5 minutes, or until greens are wilted and chicken is heated through.
- 4Remove from heat. Stir in fresh basil, fresh chives, fresh rosemary, fresh thyme, fresh mint, lemon juice, and grated lemon rind.
- 5Ladle into bowls and serve immediately.
