Ingredients

  • 1 cup brown lentils
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 garlic
  • 2 large carrot
  • 1 large zucchini
  • 1 can (14 oz) tomatoes
  • 2 cups spinach
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 lemon
  • 0.25 cup cilantro

Instructions

  1. 1Rinse the lentils under cold water until the water runs clear.
  2. 2Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant.
  3. 3Add the diced carrots and zucchini to the pot, cooking until they begin to soften, about 5 minutes.
  4. 4Stir in the cumin, coriander, and smoked paprika, cooking for another minute until the spices are fragrant.
  5. 5Add the rinsed lentils, diced tomatoes with their juice, and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for 25 minutes, or until the lentils are tender.
  6. 6Add the spinach to the pot, cooking just until wilted.
  7. 7Remove from heat and stir in the juice of one lemon.
  8. 8Taste and adjust seasoning with salt and pepper as needed.
  9. 9Serve the curry garnished with fresh cilantro.
