Ingredients

  • 1.5 cups wheat flour
  • 4 tablespoons water
  • 1 third cup olive oil
  • 1 pinch salt
  • 3 cups spinach
  • 2 cups mushroom
  • 2 cloves garlic
  • 0.5 cup red onion
  • 0.75 cup feta cheese
  • 2 large eggs
  • 0.25 teaspoon nutmeg
  • 1 teaspoon black pepper
  • 1 tablespoon dill

Instructions

  1. 1In a large bowl, mix whole wheat flour and salt. Gradually add cold water and olive oil, stirring until a dough forms. Knead gently on a floured surface.
  2. 2Roll the dough into a circle and press into a tart pan. Refrigerate for 30 minutes.
  3. 3Preheat oven to 375°F (190°C).
  4. 4In a skillet over medium heat, sauté garlic and red onion in a bit of olive oil until translucent.
  5. 5Add mushrooms to the skillet, cooking until they release their moisture and become golden.
  6. 6Add fresh spinach to the skillet, cooking until wilted. Remove from heat.
  7. 7In a bowl, whisk together eggs, nutmeg, black pepper, and chopped dill.
  8. 8Stir in the sautéed vegetables and crumbled feta cheese into the egg mixture.
  9. 9Pour the filling into the chilled tart shell.
  10. 10Bake in the preheated oven for 45 minutes, or until the filling is set and the crust is golden.
  11. 11Let the tart cool for 10 minutes before serving.
  12. 12Garnish with additional fresh dill before serving.
