Ingredients
- 5 oz turkey breast
- 1 sprig rosemary
- 2 sprigs thyme
- 1 clove garlic
- 0.5 teaspoon lemon zest
- 2 tablespoons olive oil
- 1 cup beans
- 0.5 bell pepper
- 0.25 onion
- to taste sea salt
- to taste peppers
- 0.5 teaspoon oregano
Instructions
- 1Preheat oven to 375°F (190°C).
- 2Prepare the turkey breast: Rub turkey breast with 1 tablespoon of olive oil, minced garlic, chopped rosemary, thyme, lemon zest, sea salt, pepper, and oregano.
- 3Roast the turkey: Place the seasoned turkey breast in a baking dish and roast for 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
- 4Prepare the green beans: While the turkey is roasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced yellow bell pepper and red onion and sauté for 5 minutes, or until softened.
- 5Add the green beans to the skillet and cook for another 5-7 minutes, or until tender-crisp. Season with sea salt and pepper.
- 6Serve the sliced roasted turkey breast with the sautéed green beans and peppers.
