Ingredients
- 2 eggs
- 1 tbsp extra virgin olive oil
- 0.25 cup red bell peppers
- 0.25 cup roma tomatoes
- 1 tbsp fresh basil
- 0 to taste salt

- 0.25 cup feta cheese
- 1 cup spinach
- 1 tbsp red onion
- 1 clove garlic
- 2 tbsp kalamata olives
- 1 tbsp sun-dried tomatoes
- 0.5 tsp oregano
- 1 tbsp parsley
- 1 tsp lemon juice
Instructions
- 1Whisk eggs with salt and pepper.
- 2Heat olive oil in a non-stick skillet over medium heat. Sauté red onion, garlic, and red bell pepper until softened. Add spinach, Roma tomatoes, Kalamata olives, sun-dried tomatoes, and dried oregano; cook briefly until spinach wilts.
- 3Pour in whisked eggs. Scramble until just set, then gently fold in crumbled feta cheese and fresh basil.
- 4Remove from heat. Stir in fresh lemon juice and garnish with fresh parsley.
