Ingredients

  • 1 tablespoon olive oil
  • 8 ounces beef steak
  • 2 large eggs
  • 2 cups spinach
  • 1 cup tomatoes
  • 1 clove garlic
  • 1 whole lemon
  • 2 slices wheat bread
  • 1 teaspoon thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt

Instructions

  1. 1Preheat grill or skillet over medium heat. Brush lean beef steak with olive oil.
  2. 2Season steak with sea salt, black pepper, and thyme. Place steak on grill or skillet.
  3. 3Cook steak to desired doneness, 4-5 minutes per side for medium-rare. Remove from heat and let rest.
  4. 4In a skillet, heat a teaspoon of olive oil over medium heat. Add spinach and minced garlic, sautéing until spinach is wilted.
  5. 5In another pan, cook eggs to your liking (fried or poached recommended).
  6. 6Toast whole grain bread slices.
  7. 7Slice tomatoes and season with a pinch of sea salt and black pepper.
  8. 8Arrange sliced steak, eggs, sautéed spinach, and tomatoes on a plate. Serve with toasted whole grain bread.
  9. 9Drizzle lemon juice over the steak and eggs before serving.
  10. 10Serve immediately, garnished with additional thyme if desired.
