Ingredients

  • 2 tablespoons olive oil
  • 8 slices turkey bacon
  • 6 large eggs
  • 2 cups spinach
  • 0.5 cup feta cheese
  • 1 cup wheat flour
  • 0.75 cup milk
  • 2 teaspoons baking powder
  • 0.5 medium onion
  • 2 cloves garlic
  • 1 teaspoon peppers
  • 0.5 teaspoon sea salt

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
  2. 2Cook the turkey bacon in a skillet over medium heat until crispy. Remove from heat, chop into small pieces, and set aside.
  3. 3In the same skillet, sauté the chopped onion and minced garlic until soft and fragrant.
  4. 4Whisk the eggs in a large bowl. Add the sautéed onion and garlic, chopped spinach, crumbled feta cheese, chopped turkey bacon, and mix well.
  5. 5In a separate bowl, combine the whole wheat flour, baking powder, black pepper, and sea salt.
  6. 6Gradually add the dry ingredients to the egg mixture, alternating with milk, and stir until just combined.
  7. 7Divide the batter evenly among the prepared muffin tins.
  8. 8Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
