Ingredients
- 1 lb lean ground turkey
- 0.5 yellow onion
- 1 tbsp garlic paste
- 1 tsp oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp extra virgin olive oil
- 12 oz roasted red peppers
- 0.25 cup fresh basil
- 2 cup red cabbage
- 0.5 cucumber
- 0.25 red onion
- 3 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp honey
- 6 lettuce leaves
Instructions
- 1In a bowl, combine ground turkey, minced yellow onion, garlic paste, oregano, salt, and black pepper. Form into four patties.
- 2Heat extra virgin olive oil in a skillet over medium heat. Cook turkey patties for 5-7 minutes per side, or until cooked through and browned.
- 3For the slaw, combine shredded red cabbage, diced cucumber, and thinly sliced red onion in a separate bowl.
- 4Whisk together Apple Cider Vinegar, lemon juice, honey, a pinch of salt, and black pepper for the dressing. Toss with the slaw.
- 5Serve turkey burgers on lettuce leaves, topped with the drained roasted red peppers and chopped fresh basil, alongside the cabbage slaw.
