Ingredients
- 20 oz turkey
- 2 tablespoons oregano
- 2 tablespoons basil
- 3 cloves garlic
- 1 medium onion
- 2 tablespoons olive oil
- 28 oz tomatoes
- 2 medium bell pepper
- 1 medium zucchini
- 2 medium carrot
- 1 teaspoon sea salt
- 0.5 teaspoon peppers
- 1 teaspoon oregano
- 0.25 teaspoon red pepper flakes
- 1.5 cups long-grain white rice
Instructions
- 1Preheat oven to 375°F (190°C).
- 2In a large bowl, combine ground turkey, minced garlic, chopped onion, chopped fresh oregano, chopped fresh basil, sea salt, and black pepper. Mix gently until just combined. Do not overmix.
- 3Form the mixture into 1-inch meatballs.
- 4Heat extra virgin olive oil in a large oven-safe skillet over medium heat. Brown the meatballs on all sides.
- 5Remove the meatballs from the skillet and set aside.
- 6In the same skillet, add chopped bell peppers, diced zucchini, and diced carrots. Sauté until softened, about 5-7 minutes.
- 7Pour in the crushed tomatoes and add dried oregano and red pepper flakes (if using). Bring to a simmer.
- 8Gently place the browned meatballs back into the skillet with the tomato sauce.
- 9Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and the sauce has thickened.
- 10While the meatballs are baking, cook the white rice according to package directions.
- 11Serve the turkey meatballs and sauce over a bed of cooked white rice. Garnish with fresh basil, if desired.
