Ingredients
- 2 cups chickpea
- 14.5 ounces tomatoes
- 4 cups vegetable broth
- 1 large onion
- 3 cloves garlic
- 2 large carrot
- 2 stalks celery
- 2 cups spinach
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 0.25 cup cilantro
- 1 whole lemon
- 2 tablespoons olive oil
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add chopped onion, minced garlic, diced carrots, and chopped celery. Cook until softened, about 5 minutes.
- 3Stir in cumin, coriander, and paprika, cooking for another minute until fragrant.
- 4Add the diced tomatoes (with their juice) and vegetable broth. Bring to a simmer.
- 5Rinse and drain chickpeas before adding them to the pot.
- 6Cover and let simmer for 25 minutes, allowing the flavors to meld.
- 7Add the chopped spinach and cook until it wilts, approximately 3 minutes.
- 8Remove from heat. Stir in freshly squeezed lemon juice and chopped cilantro.
- 9Adjust seasoning with salt and pepper to taste.
- 10Serve hot, garnished with additional cilantro if desired.
