Ingredients
- 3 large free-range eggs
- 3 oz salmon
- 2 tbsp dill
- 1 tsp lemon zest
- 1 tbsp chives
- 1 tbsp olive oil
- 1 cup spinach
- 0.25 tsp sea salt
- 0.125 tsp peppers
Instructions
- 1Gently whisk eggs with sea salt and white pepper in a bowl. Add chopped chives and dill, and lemon zest.
- 2Heat olive oil in a non-stick skillet over medium-low heat.
- 3Add baby spinach to the skillet and saute briefly until wilted, about 1 minute.
- 4Pour the egg mixture into the skillet. Cook, gently stirring and scrambling the eggs, until they are mostly set but still slightly moist, about 3-5 minutes.
- 5Gently fold in the smoked salmon pieces into the scrambled eggs. Cook for another minute until the salmon is warmed through.
- 6Serve immediately, garnished with extra fresh dill if desired.
