Ingredients

  • 3 cups grain flour
  • 1.25 cups water
  • 2.25 teaspoons active dry yeast
  • 0.25 cups olive oil
  • 1 teaspoon sea salt
  • 0.5 cup kalamata olives
  • 2 tablespoons rosemary
  • 2 tablespoons thyme
  • 3 cloves garlic
  • 1 cup cherry tomatoes
  • 2 pinches salt

Instructions

  1. 1Combine warm water, yeast, and a pinch of sugar in a bowl. Let sit until frothy, about 5 minutes.
  2. 2Mix whole grain flour and sea salt in a large bowl. Add yeast mixture and olive oil, mixing until a dough forms.
  3. 3Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
  4. 4Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  5. 5Preheat the oven to 450°F (230°C).
  6. 6Press the dough onto an oiled baking sheet, creating dimples with your fingers. Drizzle with a little olive oil.
  7. 7Scatter kalamata olives, cherry tomatoes, minced garlic, rosemary, and thyme over the top. Press them gently into the dough.
  8. 8Let the dough rest for 10 minutes. Sprinkle with coarse sea salt.
  9. 9Bake until golden brown, about 25 minutes.
  10. 10Remove from oven and let cool on a wire rack.
  11. 11Drizzle with extra virgin olive oil before serving.
  12. 12Cut into pieces and serve.
