Ingredients
- 3 cups grain flour
- 1.25 cups water
- 2.25 teaspoons active dry yeast
- 0.25 cups olive oil
- 1 teaspoon sea salt
- 0.5 cup kalamata olives
- 2 tablespoons rosemary
- 2 tablespoons thyme
- 3 cloves garlic
- 1 cup cherry tomatoes
- 2 pinches salt
Instructions
- 1Combine warm water, yeast, and a pinch of sugar in a bowl. Let sit until frothy, about 5 minutes.
- 2Mix whole grain flour and sea salt in a large bowl. Add yeast mixture and olive oil, mixing until a dough forms.
- 3Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
- 4Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
- 5Preheat the oven to 450°F (230°C).
- 6Press the dough onto an oiled baking sheet, creating dimples with your fingers. Drizzle with a little olive oil.
- 7Scatter kalamata olives, cherry tomatoes, minced garlic, rosemary, and thyme over the top. Press them gently into the dough.
- 8Let the dough rest for 10 minutes. Sprinkle with coarse sea salt.
- 9Bake until golden brown, about 25 minutes.
- 10Remove from oven and let cool on a wire rack.
- 11Drizzle with extra virgin olive oil before serving.
- 12Cut into pieces and serve.
