Ingredients
- 4 fillets haddock fillets
- 3 tbsp clarified butter
- 2 tbsp unsalted butter
- 2 tbsp fresh chives
- 1 small shallot
- 0.5 tsp sea salt
- 0.25 tsp garlic powder
- 4 cups cauliflower florets
- 2 cups green beans
- 0.25 cup chicken broth
- 2 tbsp whipping cream
- 1 tsp parsley flakes
- as needed water
- 4 cups butter lettuce
- 2 tbsp safflower oil
Instructions
- 1Season haddock fillets with sea salt and garlic powder.
- 2Bring water to a boil in two separate pots. Add cauliflower florets to one and green beans to the other; cook until tender-crisp, then drain.
- 3Heat clarified butter in a large skillet over medium-high heat. Pan-fry haddock fillets for 3-4 minutes per side, until golden brown and cooked through. Remove fish and keep warm.
- 4In the same skillet, melt unsalted butter. Sauté minced shallot until softened. Stir in chicken broth and whipping cream, simmering briefly. Remove from heat and stir in fresh chives.
- 5Serve pan-fried haddock with the butter-chive sauce, alongside boiled cauliflower, steamed green beans, and a simple salad of butter lettuce dressed with safflower oil.
