Ingredients
- 8 ounces grain penne pasta
- 12 ounces salmon fillet
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 cups spinach
- 1 cup cherry tomatoes
- 1 cup cooking cream
- 2 tablespoons dill
- 1 teaspoon lemon zest
- 1 cup parmigiano reggiano
- 1 teaspoon salt
- 1 teaspoon peppers
Instructions
- 1Cook whole grain penne pasta in salted boiling water until al dente, then drain and set aside.
- 2While pasta cooks, season salmon fillet with salt and pepper, then heat a skillet over medium heat and add 1 tablespoon of olive oil.
- 3Place the salmon in the skillet, skin-side down, and cook until the skin is crispy, about 4 minutes. Flip and cook until salmon is just done, about 3 minutes more. Remove from skillet and set aside.
- 4In the same skillet, add the remaining olive oil and minced garlic, sautéing until fragrant.
- 5Add cherry tomatoes and cook until they start to soften.
- 6Stir in light cooking cream, reducing heat to simmer until sauce slightly thickens.
- 7Flake the cooked salmon into the sauce.
- 8Add the cooked pasta, fresh spinach, and half of the dill to the skillet, tossing to combine and wilt the spinach.
- 9Remove from heat and stir in lemon zest.
- 10Serve hot, garnished with the remaining dill and freshly grated Parmesan cheese.
- 11Adjust seasoning with salt and pepper to taste.
