Ingredients
- 1 cup shelled pistachios
- 1 cup cilantro
- 2 cloves garlic
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 tablespoons water
- 0.5 teaspoon sea salt
- 0.5 teaspoon cumin
- 0.25 teaspoon coriander
- 0.25 teaspoon red pepper flakes
Instructions
- 1Place shelled pistachios in a food processor and pulse until finely chopped.
- 2Add fresh cilantro leaves, peeled garlic cloves, lemon juice, extra virgin olive oil, and water to the food processor.
- 3Season with sea salt, ground cumin, ground coriander, and red pepper flakes.
- 4Blend until the mixture becomes smooth and creamy, scraping down the sides as necessary.
- 5Taste the dip and adjust seasoning if needed, adding more salt or lemon juice to suit your preference.
- 6Transfer the dip to a serving bowl and let it chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- 7Before serving, give the dip a quick stir. Optionally, drizzle a bit more extra virgin olive oil on top.
