Ingredients

  • 4 fillets cod
  • 2 large leeks
  • 2 large yams
  • 4 cups chicken broth
  • 3 cups water
  • 2 tbsp unsalted butter
  • 1 tbsp safflower oil
  • 1 small shallot
  • 1 rib celery rib
  • 2 tbsp fresh chives
  • 1 tsp salt
  • 0.5 tsp garlic powder
  • 1 tsp parsley flakes
  • 0.25 cup short grain rice
  • 1 tsp rice vinegar

Instructions

  1. 1In a large pot, melt unsalted butter with Safflower Oil over medium heat. Add sliced leeks, minced shallot, and diced celery; sauté until softened, about 5-7 minutes.
  2. 2Stir in diced yams, short grain rice, chicken broth, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until yams and rice are tender. Season with salt, garlic powder, and parsley flakes.
  3. 3Gently place cod fillets into the simmering broth. Cover and poach for 5-8 minutes, or until the cod is opaque and flakes easily with a fork.
  4. 4Carefully remove the cod fillets to avoid breaking. Stir rice vinegar and 2 tbsp fresh chives into the soup.
  5. 5Ladle the soup into bowls, place a poached cod fillet in each, and garnish with additional fresh chives before serving.
