Ingredients

  • 2 slices wheat bread
  • 2 units eggs
  • 1 unit avocado
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 4 units cherry tomatoes
  • 0.5 cup arugula
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 0.5 tsp red pepper flakes
  • 1 tbsp vinegar

Instructions

  1. 1Toast the whole-grain bread slices to your preferred level of crispiness.
  2. 2Slice the avocado and drizzle with lemon juice to prevent browning.
  3. 3Bring a pot of water to a light simmer, add white vinegar.
  4. 4Crack an egg into a cup and gently slide it into the simmering water. Repeat with the second egg.
  5. 5Poach the eggs for 3-4 minutes for a soft yolk, then carefully remove with a slotted spoon.
  6. 6Mash the avocado and season with salt, pepper, and red pepper flakes.
  7. 7Spread the mashed avocado evenly over the toasted bread slices.
  8. 8Place the poached eggs on top of the avocado spread.
  9. 9Add the arugula and halved cherry tomatoes beside the toast on the plate.
  10. 10Drizzle the toast and salad with extra virgin olive oil.
  11. 11Season everything with a pinch of sea salt and black pepper to taste.
