Ingredients
- 500 g pork loin
- 300 g mushroom
- 2 tbsp olive oil
- 3 cloves garlic
- 1 medium red onion
- 200 g spinach
- 1 tsp lemon zest
- 2 tbsp rosemary
- 1 tbsp thyme
- 1 tsp sea salt
- 1 tsp black pepper
Instructions
- 1Slice the lean pork loin into thin strips.
- 2Clean and slice the mixed mushrooms.
- 3Heat the extra virgin olive oil in a large skillet over medium heat.
- 4Add the sliced pork to the skillet and stir-fry until lightly browned.
- 5Add the minced garlic and chopped red onion to the skillet, cooking until fragrant.
- 6Incorporate the sliced mushrooms and cook for another 5-7 minutes, until they are soft.
- 7Stir in the spinach and cook until just wilted.
- 8Season the stir-fry with lemon zest, fresh rosemary, fresh thyme, sea salt, and black pepper.
- 9Cook for an additional 2-3 minutes, allowing all the flavors to meld together.
- 10Remove from heat and let it rest for a few minutes before serving.
