Ingredients

  • 500 g pork loin
  • 300 g mushroom
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 medium red onion
  • 200 g spinach
  • 1 tsp lemon zest
  • 2 tbsp rosemary
  • 1 tbsp thyme
  • 1 tsp sea salt
  • 1 tsp black pepper

Instructions

  1. 1Slice the lean pork loin into thin strips.
  2. 2Clean and slice the mixed mushrooms.
  3. 3Heat the extra virgin olive oil in a large skillet over medium heat.
  4. 4Add the sliced pork to the skillet and stir-fry until lightly browned.
  5. 5Add the minced garlic and chopped red onion to the skillet, cooking until fragrant.
  6. 6Incorporate the sliced mushrooms and cook for another 5-7 minutes, until they are soft.
  7. 7Stir in the spinach and cook until just wilted.
  8. 8Season the stir-fry with lemon zest, fresh rosemary, fresh thyme, sea salt, and black pepper.
  9. 9Cook for an additional 2-3 minutes, allowing all the flavors to meld together.
  10. 10Remove from heat and let it rest for a few minutes before serving.
  11. 11Serve warm on individual plates.
