Ingredients
- 4 pieces pork chops
- 2 tablespoons olive oil
- 2 medium apple
- 1 large onion
- 2 pieces garlic
- 2 sprigs rosemary
- 1 sprig thyme
- 2 tablespoons balsamic vinegar
- 1 tablespoon unrefined brown sugar
- 0.5 cup chicken stock
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
Instructions
- 1Season the pork chops with salt and pepper on both sides.
- 2Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear until golden brown, about 3-4 minutes on each side. Remove from the skillet and set aside.
- 3In the same skillet, add the sliced apples and onions. Saute until they start to caramelize, about 5-6 minutes.
- 4Add the minced garlic, rosemary, and thyme to the skillet, cooking until fragrant, about 1 minute.
- 5Deglaze the skillet with balsamic vinegar, scraping up any browned bits from the bottom of the skillet.
- 6Stir in the unrefined brown sugar and chicken stock. Bring to a simmer.
- 7Return the pork chops to the skillet, nestling them into the apple and onion mixture. Cover and simmer until the pork chops are cooked through, about 10 minutes.
- 8Remove the skillet from heat. Let the pork chops rest for a few minutes before serving.
- 9Serve the pork chops topped with the caramelized apples and onions, garnished with additional fresh rosemary and thyme if desired.
