Ingredients

  • 1.5 lb pork loin
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 1 tsp lemon zest
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 1 tbsp balsamic vinegar

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Rub the pork loin with 1 tablespoon of olive oil, sea salt, black pepper, lemon zest, minced garlic, rosemary, and thyme.
  3. 3Place the pork in a roasting pan and cook for about 50-60 minutes, or until the internal temperature reaches 145°F (63°C).
  4. 4While the pork is roasting, toss the cherry tomatoes with the remaining olive oil, balsamic vinegar, salt, and pepper.
  5. 5During the last 20 minutes of the pork cooking, add the cherry tomatoes to the roasting pan around the pork.
  6. 6Once cooked, remove the pork loin and tomatoes from the oven and let them rest for 10 minutes before slicing the pork.
  7. 7Slice the pork loin into thin slices, serve on a plate and top with the roasted cherry tomatoes and a drizzle of the pan juices.
  8. 8Garnish with additional fresh rosemary and thyme before serving.
