Ingredients

  • 500 grams pork
  • 1 large eggs
  • 2 cloves garlic
  • 3 tablespoons parsley
  • 2 teaspoons lemon zest
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 50 grams almond flour
  • 1 medium onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon oregano

Instructions

  1. 1Preheat oven to 375°F (190°C) for baking the meatballs.
  2. 2In a large bowl, mix together ground pork, egg, minced garlic, chopped parsley, lemon zest, salt, and black pepper until well combined.
  3. 3Gently fold in almond flour to the mixture, ensuring it's fully integrated without overmixing.
  4. 4Form the mixture into 16 evenly sized meatballs and place them on a baking sheet lined with parchment paper.
  5. 5Bake in the preheated oven for 25 minutes or until they're evenly browned and cooked through.
  6. 6While meatballs are baking, heat olive oil in a skillet over medium heat. Saute chopped onion until translucent.
  7. 7Add chicken broth, lemon juice, and dried oregano to the skillet, bringing it to a simmer.
  8. 8Once meatballs are baked, transfer them to the skillet with the sauce and let simmer for an additional 10 minutes, allowing the flavors to meld.
  9. 9Taste the sauce and adjust seasoning with salt and pepper if necessary.
  10. 10Serve the meatballs and sauce hot, garnished with additional fresh parsley.
  11. 11Optional: Serve alongside a fresh Mediterranean salad or over a bed of cooked quinoa for a complete meal.
