Ingredients
- 1.5 lbs chicken breast
- 2 tbsp canola oil
- 1 tsp garlic powder
- 1 tbsp fresh ginger
- 1 large bell pepper
- 2 cups broccoli florets
- 1 cup snow peas
- 3 cups bok choy
- 1 cup cremini mushrooms
- 4 green onions
- 0.25 cup tamari
- 2 tbsp rice wine vinegar
- 1 tsp chili paste
- 1 tbsp honey mustard
- 1 tbsp cornstarch
- 0.25 cup low sodium chicken broth
- 0.5 tsp salt
- 0.25 tsp cracked pepper
- 0.25 cup cilantro
- 2 lime wedges
Instructions
- 1In a small bowl, whisk together tamari, rice wine vinegar, chili paste, honey mustard, cornstarch, and chicken broth. Set aside.
- 2Heat Canola Oil in a large wok or skillet over medium-high heat. Add chicken breast and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken and set aside.
- 3Add garlic powder, grated ginger, bell pepper, broccoli florets, snow peas, bok choy, cremini mushrooms, and green onions to the wok. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- 4Return cooked chicken to the wok. Whisk the sauce mixture again and pour over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
- 5Season with salt and cracked pepper. Garnish with fresh cilantro and serve with lime wedges.
