Rich Tomato-Herb Baked Butter Beans

Ingredients

  • 30 oz butter beans
  • 0.25 cup extra virgin olive oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 2 tbsp tomato paste
  • 1 can italian plum tomato
  • 1 cup herb broth
  • 1 tsp oregano
  • 1 tsp dried dill
  • 2 bay leaves
  • 1 tsp coarse salt
  • 0.5 tsp black pepper
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 0.25 cup parsley

Instructions

  1. 1Preheat oven to 375°F (190°C). In a large oven-safe pot or Dutch oven, heat olive oil over medium heat. Sauté onion until softened, about 5-7 minutes. Add garlic and tomato paste, cook for 2 minutes, stirring constantly.
  2. 2Stir in crushed Italian plum tomatoes, herb broth, dried oregano, dried dill, bay leaves, salt, pepper, and red wine vinegar. Bring to a simmer.
  3. 3Add the drained and rinsed butter beans to the pot, stirring gently to combine.
  4. 4Cover and bake for 45 minutes, then uncover and bake for another 15-20 minutes, or until the sauce has thickened and the beans are very tender.
  5. 5Remove bay leaves. Stir in lemon juice and garnish generously with fresh parsley before serving.
