Ingredients
- 24 shells wheat pasta shells
- 1.5 cups ricotta cheese
- 2 cups spinach
- 1 large eggs
- 0.5 cup parmigiano reggiano
- 0.25 cup basil
- 2 cups marinara sauce
- 1 cup mozzarella cheese
- 2 cloves garlic
- 0.25 teaspoon nutmeg
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- 0.5 teaspoon salt
Instructions
- 1Preheat oven to 375 degrees F. Lightly oil a baking dish.
- 2Cook whole wheat pasta shells according to package instructions until al dente, drain, and set aside.
- 3In a skillet, sauté garlic and fresh spinach in olive oil until spinach is wilted.
- 4In a mixing bowl, combine part-skim ricotta cheese, cooked spinach, beaten egg, grated Parmesan, chopped fresh basil, nutmeg, salt, and black pepper.
- 5Stuff each pasta shell with the ricotta-spinach mixture and place in the prepared baking dish.
- 6Pour marinara sauce over the stuffed shells.
- 7Sprinkle the top with shredded mozzarella cheese.
- 8Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
- 9Let cool for 5 minutes before serving.
- 10Garnish with additional fresh basil before serving.
