Ingredients
- 2 slices wheat bread
- 1 large avocado
- 4 ounces sardines
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 0.25 teaspoon red pepper flakes
- 0.5 cup cherry tomatoes
- 0.5 cup cucumber
- 2 tablespoons red onion
- 1 cup arugula
- 1 teaspoon black pepper
- 0.5 teaspoon sea salt
Instructions
- 1Toast the whole grain bread slices to your preferred level of crispiness.
- 2While the bread is toasting, mash the avocado in a bowl and season with half the lemon juice, sea salt, and black pepper.
- 3Open the canned sardines and drain the oil (or water, depending on the type).
- 4In a small bowl, mix the sardines with the remaining lemon juice and a tablespoon of extra virgin olive oil.
- 5Slice the cherry tomatoes and cucumber into small pieces. Finely chop the red onion.
- 6Spread the mashed avocado evenly over the toasted bread slices.
- 7Top the avocado with the sardine mixture.
